LUBBOCK, Texas -
Small business owners in Lubbock circled the trucks Saturday to show off their cuisine at a food truck festival.
It's been almost two years since Lubbock City Council approved food trucks in the area, and the business is thriving -- one owner says vendors are looking forward to being able to spread out even more throughout the city.
"I know it's been on the news in the past that they've had different food truck festivals that have had problems," vendor Cody Delgado said, "but we've gotten word that they're going to start working on restrictions to loosen them up and everything, so we can park more freely where we'd like."
Delgado said he expected the festival to serve more than five thousand visitors.
